I rebuilt about half the menu this month, more than I usually change at once. The tomatoes coming in right now are too good to build a menu around anything else.
The dish I'm proudest of is a simple one: heirloom tomatoes, burrata, and a basil oil we make fresh every morning. No cooking involved, which is the hardest kind of dish to get right.
If you come in this month, ask for it even if it's not on the printed menu yet. We're still deciding what to cut to make room.
