Dinner,
sorted.

Three dinners you can start tonight, and the one rule for pasta water we actually follow.

Sweet potato and onion, the easiest side there is.

COOKING THIS WEEK

Nothing here takes longer than forty minutes

Chicken and lemons on one tray, a stew you start before your coat is off, and a risotto you don't have to babysit.

01 · 35 MIN · SERVES 4

Sheet-Pan Chicken with Charred Lemon

Thighs, potatoes and halved lemons, all on one tray. The lemons go jammy and become the sauce.

02 · 15 MIN · SERVES 2

Fifteen-Minute White Bean Stew

Tinned beans, garlic and whatever greens are wilting. Start it before you take your coat off.

03 · 40 MIN · SERVES 4

Weeknight Mushroom Risotto

No constant stirring. Add the stock in three goes and read a chapter in between.

TECHNIQUE

Salt the water like the sea

Salty water seasons the pasta from the inside. Undersalt it and no sauce afterwards fully makes up for it. A small handful per pot is the rule we actually follow.

FROM THE KITCHEN

Home cook, Skillet

Hi Alex, that's the issue. If you make one of these, I'd like to hear how it went, good or burnt.

P.S. Next week: the soup I make when the fridge looks empty.
